Ruby’s Recipes: ÔĽŅPan Seared Salmon Salad¬†

As much as I love seafood, I could slick be a pescatarian if I didn’t love me a good porterhouse steak, bbq and tacos! I mean, really I just love to eat.

Ain’t no shame in my game. (flips hair)

Nonetheless, I try to balance my ogre (think pretty version of Fiona in Shrek) pregnancy appetite with healthy options. Salads are a course an easy healthy option but I feel like I ALWAYS eat chicken salads. From time to time, I like to switch it up and add salmon for a fresh, light and swankier taste. Recipe below!

Ingredients for Pan Seared Salmon:

Salmon filet

Lemon Pepper Seasoning

Olive Oil

Skillet

 

Salmon is a very delicate fish and you have to ensure to prepare it correctly or it’ll be tough instead of its intended light and flaky texture!

 

Instructions:

Season salmon with lemon pepper and black pepper by generously sprinkling on top.

Rub in seasoning with your fingers to evenly distribute and create an outer coating

Heat pan on medium ‚Äď high (cast iron is my favorite) with just enough olive oil to cover the bottom of the skillet to ensure your salmon doesn‚Äôt stick!

Place salmon in skillet (non-skin side face down) and let sear for 3 minutes.

The best way to know when to flip the salmon, as with all fish, is by testing it with a little trick! With a spatula, try to flip it. If you feel hesitation, it’s not ready!

Once ready, flip then cook on the other side for another 3 minutes. Salmon is done when it flakes easily with a fork. Squeeze fresh lemon juice for refreshing lemony taste!

Top salmon on your favorite salad mixture! For me, it is baby romaine lettuce, spinach, avocado, boiled egg, cherry tomatoes, shredded cheese with balsamic vinaigrette. Healthy and delecatble meal in under 20 minutes!

Baby Brown’s Gender Reveal!

The time is here to find out the gender of Baby Brown!

In preparation for the party, I knew I wanted a simple menu with delectable appetizers under the theme of “beau” or “bow.” ¬†The menu consisted of “baby” items that were small and/or bite size such as baby quesadillas, baby meatballs, beef sliders, mini¬†pulled chicken bbq sandwiches, baby carrots, cucumbers and broccoli, fruit cups, ¬†taco dip, salsa¬†with scoops chips & salsa and cake pops!

    

 

We really wanted to be completely surprised and find out with all of your loved ones! In order to keep it a complete surprise, we had the doctor write down the gender of the baby and seal the envelope before giving it to us.

 

We had NO CLUE of the baby’s gender! Then, we took the envelope, blue and pink confetti to Jewel-Osco, ironically Party City will not fill the balloon with confetti, and had them fill the balloon with the correct color confetti! It was not until we popped the balloon that we found out with every one!

Don’t throw those roses away! DIY Rose Body Scrub & Rose Potpourri Pouch

Rinse. Reuse. recycle. As my mom always says, “Once you buy it, you can do what you want with it!” Well, Bay bought these roses for me but I am going to repurpose them to get the most out of the beauties. It’s been a week and they have held up magnificently but let’s face it, they will begin to wilt sooner than later. In this post, I will highlight 2 quick ways you can repurpose your roses!

FIRST: Unless your roses are organic, make sure to remove all pesticides by soaking the roses in baking soda for 15-20 minutes. You do not want to use roses/flowers with pesticides on your skin.

#1 Rose Body Scrub

Body scrubs are amazing to¬†gently remove dead skin cells, dirt and oil from the outer layer of skin. This helps to unclog pores and expose your skin’s underlying healthier layers.

Ingredients

1 cups Epsom Salt
3/4 cup baking soda
1 Rose
For Fragrance: Rose Essential oil  or Jasmine Essential Oil (Do NOT use NOT home fragrance on your skin!)

 

#2: Rose Potpourri Pouch  

Place them in your dresser drawers, closets or shoes to add a fresh fragrance to  them! Great to place in storage containers, cupboard to create fragrant aromas!

Ruby’s Recipes: Homemade Biscuits for a good ole’ country meal!

Yes, you can get you some canned or frozen biscuits and smack them in the oven but I can GUARANTEE they won’t last like these. Not to toot my own horn but beep beep ahhhh toot toot. There’s nothing, I mean nothing like some good thick southern biscuits chile! Add honey for a Popeyes feel or jelly for that belly in the morn’ting! ¬†Simple and easy.

When I cook, I just eyeball amounts. However,¬†if I say you need about two shakes of flour you mayyyy not know what I’m talking about. Thus, the hardest about making these biscuits were making sure to capture the correct measurements. You will love the simplicity of this recipe

First things first, I poppa — I mean, first things first, pre-heat the oven to 425¬į. Work with me y’all! I jams on the 90’s.¬†Preparation is key! Lay out all pf your ingredients, measuring cups and allow butter to begin softening on counter. Trick, place butter right on oven top as the heat will begin to help it melt.

Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 stick of softened butter
  • 3/4 cup milk, ( feel free to add less or more per the consistency more)
  • Rolling Pin or (Wine Bottle wrapped in plastic wap. Hey, you gotta make sum shake! ūüíĀūüŹĹ)

Instructions:

Using a large mixing bowl, combine all of your dry ingredients: flour, baking powder, salt and sugar. It is best to mix them when they are all dry to ensure the ingredients blend well. One of the worst things is biting into a patch of flour or salt! Blend it like you blend that makeup hunt!

If your butter still isn’t softened, fill a glass with water and microwave until boiling. Use a mitten to remove the glass from the microwave, pour out the water and place the butter under the glass with the opening towards the counter. Let it set to soften the butter for about 60 seconds. Repeat if needed.

After ensuring your butter is softened, cut the butter into cubes by cutting it vertically and horizontally. Then, take the butter knife in small sections to make cubes. You will then use a fork to smash the butter into the dry mix until it is a consistent texture. The butter should look like flakes in the mixture. DO NOT USE A MIXER! You want to butter to melt in flakes for that soft fluffy taste.

 

Now, you will need to slowly add milk into the middle of the mixture. You can use a large mixing spoon for the consistency until thick enough knead with your hands. The mixture should feel thick like dough and slight sticky. If still too dry, slowly add more milk only as needed.

How to roll the dough: Everybody get your roll on, everybody get your …roll on WHAT?!

 

Sift flour on a open countertop to create an even layer of flour by using a sifter or a cheese grater. (Queen of improvising taught you.) Place the dough on the flour and begin to roll. The thinner you roll the dough, the thinner the biscuit. The thicker you roll it, the thicker the biscuit.

 

 

 

 

 

Cut it, cut it, cut it, that dough is way too thick you need to cut ittt!

Once you have gotten it to your desired thickness, use a round glass to cut the dough. Tap the glass into the flour first to create a coating which will prevent it from sticking to the dough. Try to cut the biscuits as closely as possible to avoid any left overs. Look, you bet not waste those leftovers! Take the scraps, roll it in a ball and you got yourself a big ole biscuit. Waste not will not.

Bake for 10 minutes, spread butter on the top and bake another 2 minutes or until golden brown. Now, you can get down on it. Hannnnn.

Stuffed Bell Peppers in 5 Steps

Stuffed Bell Peppers Recipe

When you want to be fake fancy while serving a real family, this¬†is a quick and easy go to! The reality is, who has time to live in the kitchen when there’s a list of other things to tackle such as drinking wine and catching up on your shows? Not I said the cat, not I. Look, don’t judge me.

Ingredients:

4 Green Peppers

1lb Ground Turkey or Ground Beef

1/2 cup of brown rice (Get that minute rice if you have to, shoot!)

1/2 cup water

1 Medium Red Onion

1 Garlic Clove

1 teaspooon Lawry’s Seasoning Salt

1 teaspoon black pepper

1 teaspoon onion powder

1 can of tomato sauce

Only 5 Steps, then hit play on your DVR!

  1. The rice will always take the longest! Add rice and water into pot until boiling point. Then, reduce heat and simmer for about 20 minutes. Preheat oven to 375 to get it percolating. (It’s time for the perculator, it’s time for the perculator. Dewwwww Dewwwww! Ok, ok, ok I am back!)
  2. Ground turkey¬†is tricky to cook, if you don’t know what you’re doing. I’m not going to leave you hangin’ playa! Chop onions, garlic clove and season ground turkey with black pepper, onion powder and Lawrys at the very beginning! Ground turkey has to absorb that flavor or it will be bland. If you’re using ground beef, feel free to season throughout the browingine process. Stir constantly who mincing the meat.
  3. While the rice and meat cooking, you can prepare your green peppers. You can either chop the green peppers in half through the stem or cut the top off. It is all a matter of preference. I prefer them cut horizontally as they seem to cook evenly and are easier to season. Drizzle peppers with olive oil, salt and pepper to ensure they have flavor, too. Place on glass or non stick dish with opening face up.
  4. Mix rice, ground meat, tomato sauce and fill the green peppers with the mixture. Cover them with aluminum foil and place in oven for 25 minutes. add cheese for the last 5 minutes for the finishing touches.
  5. Serve on swanking table setting with garnish of your choice. Oh, you fancy huh?!

Trap Transalations

Jagged Edge is my favorite group of ALL TIME! Point blank period. I know, I know the sidetracking in me never left. I love to paint a story, I can’t help it ūüėā

Yuuuup), being a Belieber and of course sipping on my Lemonade with Yonce. The other side of me, loves trappin’ out the bando. ¬†Yes, I mean Future, Torey Lanez, ¬†2 Chainz and artist alike. ūüĎÄ

Like one of my mentors in my head, Shonda Rhimes, THE SHONDA RHIMES says in her book, Year of Yes: How to Dance It Out, Stand In the Sun and Be Your Own Person, you will not come up on my page judging me.

or motivating you to just get it done -whatever “it” is. No excuses. No complaints. Just trapping out the bando!

Besides random mumbling of disoriented lyrics with lack of substance that some rap songs have, sometimes all you need is a good beat. Like people kill me thinking everything has to be deep! Not all music is deep. Some music is specifically made for you to wipe off your head, shoulders, knees, toes because you ON! B-O-O-S-I-E B-A-D – ok, sorry I just mentally got turned up. I’m back, I’m back.! My point is there’s good music with clear meaning, depth and strong messaging, dance music with fun catchy lyrics to make you pop lock and drop it and some music that falls in between.

In this edition of Trappin Translations, we will visit the contributions of the orginator of one of my favorite motivational songs in the fine art of rap. Big Sean (Boooooiii!) is the artist whom created ¬†“Bounce Back.” The lyrics read,

Last night took an L, but tonight I bounce back
Wake up every morning, by the night, I count stacks

Trap Transalation:

Let’s talk about this, last night he took an L also known as a loss but by the end of the night he was able to bounce back. He was able to recuperate what he had loss rather it be his focus, his ability to achieve a goal or a certain amount of funds. ¬†Despite the situation that could have defeated him, discouraged him from pushing forward to prosper in his day, he was able to persevere by the end of that very same day. Talking about motivation?!?

Rather wanting to start your own business, climbing the corporate ladder, you should want to have this same mindset that one day can change anything!

Any day that you don’t, as Big Sean says in this song, wake up in “beast modeeee”, or not dedicated to your craft or showcasing your talents is a day that you can miss out on that opportunity! You never know who is watching you or whom you may encounter that day. It could be a influential customer who unexpectedly promotes your business or senior management who notices the astounding work your have been doing on a project. You just never know!

New Year’s Eve Traditions

The good ole country girl in me knows there are certain traditions that you just have to uphold when it comes to New Years Eve or your whole year will be bamboozled, hoodwinked, ran a muck, led astray!

How you start the new year, is how you end it!

You can not, I repeat, cannot go into the new year with a dirty house. Of course, your house should be clean all year but this is a special kind of cleaning, like the cleaning your mom made you do when on punishment. I mean, scrubbing base boards, wiping down walls, dusting, washing and folding all clothes in the house. Like good ole old school cleaning. Yes, today, I will be the Black Cinderella! Clean your house, clean your old habits and clean out the old to welcome the new!.

New Year’s Eve Meal

Now once again, y’all know I am a southern belle. M.I. crooked letter crooked letter I hump back hump back I, to be specific. So, of course one of the dishes to eat on New Year’s Eve will be good and country.giphy.gif

Black eyed peas are know to bring good luck into your new year! They should be partnered with¬†green vegetables as they are supposed to reflect the welcoming of money into your new year. I don’t know about you, but I am def trying to be cashed out. Fish are lucky ¬†for multiple reasons such as swimming forward and progressing in life!

Our whole meal tonight will be black eyed peas, cabbage, corn bread and fried catfish with my favorite Frank’s Red Hot, Hot Sauce. The sauce doesn’t resemble anything for the new year besides good flavor in ya’ ear or should I say mouth. Tasty! Now, my aunt just called and told us that lobster tails are on sale ūüĎÄ We may have to slide those on the plate, too. I mean, why not? ūüėŹ

Midnight Kiss

I believe in spending New Year’s Eve with those you love the most whether they are family and/or friends. This year, we are keeping it simple with my husband, son and parents. At the stroke of midnight, I will be sharing a kiss with my bunny aka Bay and my little hunny. Excited to bring in the new year with those I love the most!

Tomorrow, I will sit down and clearly finalize all of my goals for 2017. What doesn’t get measured doesn’t get done!

Christmas Dinner: Sweet potatoes, mac & cheese with collard greens, these are a few of my favorite things!

What better way to celebrate the holidays than being with family, friends and of course having¬†your favorite drink? ūüėŹ ¬†I mean, what is a party without a pequito le turn up? Yes, that is a mixture of Spanish and French. I am trilingual. You mad or nah?

Hannnn. This year we hosted Christmas at our house with my side of the family. Traditionally, we spend Christmas Eve at my in laws baking cookies for Santa with the chil’ren, playing our favorite card games while eating the best seafood boil ever and sipping on our favorite dranky drank. We spent the night there to be awaken early in the am by the same said chil’ren who want to open up their Christmas gifts. Works out perfectly because once they are done opening gifts, we head home take a tiny nap and get prepared for the night time festivities.

Christmas day my parents and siblings come over to exchange gifts and partake in family fun! This is our second year in our home and I really wanted to get extra fancy with a formal table setting for everyone breaking bread together.

You know, put some stank on it! I will have something for everyone ‚Äď my mom doesn‚Äôt drink, my dad loves a good vodka or tequila, my husband only drinks dark liquor and my youngest brother drinks ummm whatever (when you‚Äôre young, you can do that.) Unfortunately, my oldest brother and sister in law decided to move across the world to the east coast right before having my nephew! ūüėě Thus, they weren‚Äôt be able to join us this year. Thankfully with technology we were able to FaceTime them to make them feel included in the festivities.

Couple’s Trip to New Orleans: Baecation Recap

Baecation was exactly what we needed. Time away, just the two of us with plenty of libations to consume and food to enjoy! The city of New Orleans has this whimsical appeal to it with energy that is indescribable. Southern hospitality is an understatement there! From the time we landed, each individual we encountered, from our Uber drivers, waiters and  random people we met throughout our stay Рwere determined to ensure we were enjoying our time there! To say we enjoyed ourselves, is an understatement!

We stayed at the luxurious Loews hotel located on Poydras which was perfect location nestled into the downtown area but walking distance from Bourbon street. While we debated staying near Bourbon Street or downtown NOLA, we quickly decided that getting sleep without the interruption of thy turn up taking place outside was more important than being by the action. #SleepOverTurnUp

Our hotel was right across the street from a Harrah’s casino. Since it wasn’t Vegas, we automatically assumed that the casinos would be like local casinos back home near Chicago, where you pay to play and to drink. We were pleasantly surprised when playing black jack that drinks were complimentary like Vegas! Heyyyy now! My order of water quickly changed to a margarita on the rocks.

We really wanted to see the lay of the land, learn about the history and the locals since it was our first time visiting. But, first, we had to eat! Our location was literally 2 blocks from the famous New Orleans Riverwalk with beautiful scenic views, shopping and dining options.

Our first meal of the trip was on the river at Crazy Lobster while trying their infamous Voodoo Juice. Yes, I was scared of the name but LOVED the taste of the rum punch concoction. We loved it so much, we took one for the road to explore the rest of the city!

Yes, y’all, you can drink while walking down the street in New Orleans! Come all the way throughhhh!

Might I add, I also found a Groupon for $30 for $60 worth of food. Ballllllin! Y’all know I love a good deal!

The first night, visited the fun shops, bars and even had dinner on Bourbon street ago Oceanas. Friends of ours recommended their surf and turf in which my husband ordered while I tried the “Taste of New Orleans” that provided NOLA’s infamous dishes. fullsizerenderSidebar:¬†Naturalistas, if you’re thinking of wearing your natural hair straightened in NOLA, don’t LOL Here is a before and after humidity shot of my hair. When in doubt, bun it out. I didn’t bring any product for a bun thus had to go for the easy bun look. ¬†Shout out to the local beauty supply store for having my favorite edge control available to create a slick bun later on in the trip!

With a high of 75 on day 2, we were excited to try an outdoor activity! We found a Groupon for Cajun Critters in Westwego which was about a 10 minute Uber ride from our hotel and  free ride at that since my husband had never used Uber. We used code fhdeszs2ue for $10 0ff our first ride! Our tour guide had a wealth of knowledge as being an alligator hunter with over 20 years of experience. It was refreshing being one with nature and seeing the alligators up close and personal.

Of course we had to try the beignets, french doughnuts, from Cafe Du Monde – The Original French Market Coffee Stand Since 1862. They were literally everything they were¬†hyped up to be! We loved them so much that we went again on our last day. ūüĎÄ Sweet, hot and delicious! They are squared donuts served warmed. Pair it with their signature coffee au lait!

My favorite restaurant from the trip, hands down was Drago’s. They are said to be the originator of the charbroiled oysters that did NOT disappoint. When ordering, we weren’t quite sure if we would absolutely love the oysters and thus opted for ordering a half a dozen versus a full dozen. Our waitress advised that everyone loves the dish and assured we would want to double up; she was right! I cold have eaten them as my entree and been entirely satisfied. You know it’s good when you start trying to figure out how you can make it at home! Since we had the dozen when it was all said and done, we decided to split the Mixed Grill Seafood Platter – which we loved just as much! Not to mention, the drinks were great with a strong delightful kick.

I live for a great brunch. So, it was legit critical for me to find a great breakfast spot.Thankfully our Uber driver recommended Ruby Slipper Cafe. I am a sucker for a deal and reviews and thus always research ahead of time. After pursuing the menu, I was pleasantly surprised with the selection and to find a coupon for a free side by simply signing up for their rewards program. Easy button! Signed up in last than 2 minutes and got our beef hash side for the free!

My husband always jokes about how decisive I am when it comes to ordering, I will stare at the menu, ask for the waiters recommendation and still ponder between my top 2 items! I was considering between two different egg benedicts, but with their “The Peacemaker” option, I was able to get one of both! Hubby ordered the banana foster french toast.

Let’s also pay homage to this super sized mimosa! Come throughhhh!

The New Orleans Riverwalk had a plethora of shopping and our favorite was a boutique winery shop with wine tasting and bottles for purchase. For the free 99, you were able to sample the frozen wine selection. For $12, we received a souvenir wine glass and were able to sample 5 generous pours of wines from local vendors in New Orleans to international wines from Italy. In addition, they had frozen wines in different flavors such as Peach Passion Pinot Noir, Zinfandel Mango Nola Hurricane Cabernet to name a few. Not to mention, the service was impeccable with a great hostess and ambiance as the NOLA music played in the background.

If you haven’t noticed by now, we ate [and drankūüćĻ] pretty much everything on this trip! #RealLifeGoals Dinner this particular night was at Royal House. Our server had been with the company for 8 years, knew the menu like the back of her hand and recommended the best dishes for us to enjoy.
